Grilled Chicken Salad with Salsa Vinaigrette

8 cups shredded romaine lettuce 1 yellow bell pepper, seeded & diced, 1 cup chopped cucumber, ½ cup Salsa vinaigrette(recipe below) 4 grilled chicken breasts(boneless, skinless) ½ cup Creamy Hummus 2 tablespoons chopped fresh parsley
Place the lettuce, bell pepper, and cucumber in a large mixing bowl. Add the salsa vinaigrette and toss well. Divide the salad evenly among 4 dinner plates. Place 1 grilled breast on top of each salad. Top breast with 2 tablespoons Creamy Hummus. Garnish with Parsley.
Salsa Vinaigrette:
1 cup roasted tomato salsa (or your favorite salsa) ¼ cup cider vinegar 3 tablespoons extra-virgin olive oil ½ teaspoon ground black pepper
Combine the salsa, vinegar, oil, and pepper in a blender or food processor until smooth.
